I wonderes why you resp. Americans do not use "Quark" for Cheesecake. I think you call it curd. Now i read thats considered a delicacy and is expensive af in the US. Is it right?

You don’t have to cut the green part of the strawberry since you will blend it. That green leaf is edible and full of nutrients , besides it will be much faster to just rinse and freeze the strawberries as they are !😊
